- 1 cup shortening (yes, I know...shortening; I never said they were healthy)
- 1 cup white sugar
- 1 egg
- 1 cup canned pumpkin
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon soda
- 2 teaspoons cinnamon
- 1/2 teaspoons salt
- 1/2 cup coarsely chopped pecans or walnuts (optional- I omitted the nuts)
- 2 cups semi-sweet chocolate chips
Combine and mix all ingredients except nuts and chocolate chips. Once mixture is fully combined stir in all the nuts and chocolate chips.
Bake at 350 degrees for 10-12 minutes
