Butternut Squash Lasagne



A couple of years ago I made this lasagne and blogged about it (only without a picture). I have been wanting to make it again and finally got around to it. It isn't difficult to make but there are a lot of steps involved, however, they can be done a day or two ahead of time. It's a pretty rich dish so I was looking to lighten it up a little by omitting the pasta and cut back the sauce and cheese by half. So I guess it was more of a casserole this time around. Either way, this dish is dynamite and well worth the effort!
